If you want to make them oat-free, I highly encourage you to try buckwheat flakes as an alternative to oats. These flakes would make the cookies safely gluten-free, they are super-duper in their nutritional value PLUS no one will know the difference! You can find buckwheat flakes in all Health Food Stores.
Tali's Favourite Chocolate Chip Cookies (Gluten-Free)

1/4 cup coconut oil, melted
1/3 cup coconut sugar
2 tbsps pure maple syrup
1 tsp pure vanilla extract
1/4 cup almond flour
1 1/2 cups oats OR buckwheat flakes
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 cup chocolate chips
1 tbsp walnuts, finely chopped (optional)
Preheat oven to 350F.
Lay some parchment paper on a large baking sheet.
Combine all ingredients, except chocolate chips and walnuts, and mix well. Then add in the chips and nuts.
Using a small spoon, dipped in warm water, scoop out the dough and place on parchment-lined baking sheet. You will get about 22 cookies.
Bake for 15-18 minutes.
Let cool and enjoy.
