Sun-Dried Tomato Hummus

1 can chickpeas, drained (I use BPA-free Eden brand)
1 clove garlic
1 tbsp tahini
4 tbsps freshly squeezed lemon juice
1/8 cup olive oil
1/4 cup water
1/2 cup sun-dried tomatoes, dried/in-oil (reserve several for garnishing)
2 tbsps coriander, chopped (reserve 2 tsps for garnishing)
Salt, pepper & cayenne to taste
In a food processor/blender, combine all ingredients and process until smooth.
Transfer to serving bowl and garnish with reserved sun-dried tomatos, coriander or as desired. Other great garnishing options are chickpeas, pine nuts, paprika, cumin, za'atar, parsley and olive oil.
