Hearts of Palm are harvested from the inner core of certain palm trees. They are grown mainly in Florida, Brazil and Costa Rica. These flavourful stalks, which taste a bit like artichokes, are actually a great source of protein, vitamin A, folic acid and potassium. You can buy them in a jar or canned, packed in water. They are a great addition to salads and go so well with balsamic vinegar. This oh-so-simple and delicious salad, is perfect as a side dish to any entree. Hope you enjoy it.
Salada de Palmito

1 can of hearts of palm
2 cups cherry tomatos, halved
1 onion, sliced thinly
1 tbsp fresh basil, chopped
4 tbsps extra-virgin olive oil
1 tsp fresh lemon juice
1 tbsp balsamic vinegar
Salt and freshly ground pepper to taste
Drain hearts of palm and slice into 1 inch pieces.
Place tomatos, hearts of palm, onion and basil in large salad plate.
In a small bowl, mix all dressing ingredients and drizzle over salad.
Let it to sit for a few minutes before serving. This will allow the flavours to combine.
