Raw Walnut Brownie Bites

1 cup walnuts, finely chopped
2 cups pitted medjool dates, finely diced
6 tbsps Almond Butter
1/2 cup raw cacao powder
3/4 cup fresh water, or more, as needed
1 100g dark chocolate bar, min 70%, broken into squares
1 tsp coconut oil
Shredded unsweetened coconut
You may choose to either hand mix all ingredients or use a food processor/blender, depending on preferred consistency.
Spread mixture onto a small Pyrex dish lined with parchment paper. Set aside.
Prepare the chocolate glaze in Bain Marie*.
Drizzle glaze over the brownie mixture, sprinkle with shredded coconut, cover and freeze overnight.
Using a sharp knife, cut into small squares, place them in a large container and store in the freezer.
Enjoy bites straight from the freezer, or to serve to guests, place into mini paper cups.
* Bain Marie: Place the chocolate squares + coconut oil in a heatproof bowl over a pan of simmering water. The base of the bowl should sit above the water without touching it. Once the water begins to boil, turn heat off and keep stirring while allowing the chocolate, together with the coconut oil, to melt until it is smooth, shiny and glossy.
