Here's a great Meatless Monday dinner recipe idea. You will LOVE it!
Meatless Monday Fried Wild Rice

2 cups wild rice
4 cups filtered water
1 inch piece ginger, diced
1 tsp extra virgin olive oil
1 carrot, grated
1 red pepper, thinly diced
1 celery stalk, thinly diced
3/4 tsp salt
1/4 tsp pepper
1/4 tsp cumin powder
1/4 cup tamari sauce
2 tbsps coriander, chopped
1 can red kidney beans, drained and rinsed
Boil water and add wild rice. Cook until tender, set aside.
In a heated wok, sautee ginger in oil. Add all vegetables, spices and stir-fry until cooked.
Add tamari sauce, red kidney beans, coriander and reserved cooked wild rice. Mix well.
Serve as a main meal or as a side dish.
