Freekeh is indeed excellent for digestive health, weight control and immunity. It is a very high source of dietary FIBRE (double that of quinoa and 3X of brown rice), high in PROTEIN AND CALCIUM, low on the glycemic index, making it good for diabetics, and rich in LUTEIN, a carotenoid important for eye health. It is also rich in prebiotic properties, which provides sustenance for the good bacteria in the gut.
It is versatile, can be substituted for rice, couscous and quinoa dishes and cooks in only 20 minutes. It has a smoky, nutty flavour and a chewy texture, similar to bulgur. It may be enjoyed as a cereal, as a side dish or added to soups. Unlike quinoa, it is NOT gluten-free.
