Cauli-Sweet Potato Soup

2 tbsps olive oil
1 head of cauliflower, chopped into florets
2 sweet potatoes, peeled and quartered
1 large onion, diced
6 cups of water
1 1/2 cloves of garlic, minced
1 1/2 tsp salt
1/2 tsp cumin powder
Fresh black pepper to taste
Pinch cayenne pepper
In large saucepan, sautee cauliflower, sweet potatoes and onion with oil until lightly browned.
Pour water into saucepan, over sauteed vegetables, add garlic, seasonings and mix well.
Bring to a boil and then allow to simmer for 20 minutes, almost fully covered with lid.
Remove from heat and place saucepan on a wooden board.
Using an immersion hand blender, puree all soup contents. Stir well.
Serve hot, garnished with chopped cilantro and cashew nuts.
