Lemon Bliss Truffles

3 tbsps maple syrup or unsweetened date syrup
½ tsp vanilla
1 tbsp grated lemon zest
1/4 cup lemon juice, freshly squeezed
1 tbsp hemp hearts
1 cup unsweetened cashew butter
1/4 cup unsweetened shredded coconut
Combine all ingredients, except shredded coconut.
Wet hands and roll into 1 inch balls.
Place balls on parchment-lined pyrex dish and freeze for 15 minutes.
Roll balls into ¼ cup unsweetened shredded coconut. Make sure balls are evenly coated with the flakes.
Store in freezer.
