Caramelized Pecan & Cranberry Granola Bars

1/2 cup chopped pecans
1 tsp organic cane sugar
1 1/2 cups oats
1 1/2 cups crispy rice cereal
1/2 cup dried cranberries
3/4 cup pure maple syrup
1 1/2 tsps vanilla extract
1 1/2 tsps cinnamon
1 1/2 tbsps raw cacao (Optional - although I add cacao everywhere that seems appropriate ;))
Preheat oven to 400F.
Place chopped pecans on a baking dish and sprinkle with sugar.
Toast pecans for 15 minutes and remove from oven.
Reduce heat to 375F.
Line a baking pan with parchment paper.
Mix all other ingredients and add toasted pecans.
With wet hands, press firmly onto pan.
Bake bars for 20 minutes.
Using a sharp knife, cut into bars and store.
