Chocolate Peanut Bars (No-Bake)

10 medjool dates, pitted and chopped
2 bars, 100g. each, of good quality dark chocolate (min 70% cacao)
2 tsps coconut oil
1/2 cup peanut butter (I use Nuts To You Nut Butter, organic smooth)
2 tbsps peanuts, finely chopped
Melt chocolate with coconut oil over Bain Marie*.
Pour 1/2 chocolate mixture onto a parchment-lined loaf pan. Freeze for 1/2 hour.
Drizzle/spread 1/4 cup peanut butter evenly onto frozen chocolate base.
Lay chopped dates on top of peanut butter.
Drizzle/spread remaining 1/4 cup of peanut butter over dates.
Sprinkle over the chopped peanuts.
Pour remaining chocolate mixture on top.
Freeze for a few hours until set.
Cut into bars or squares.
Place bars/squares in an airtight container and store in freezer or fridge.
* Bain Marie: Place the chocolate squares + coconut oil in a heatproof bowl over a pan of simmering water. The base of the bowl should sit above the water without touching it. Once the water begins to boil, turn heat off and keep stirring while allowing the chocolate, together with the coconut oil, to melt until it is smooth, shiny and glossy.
