Simple Honey Cake (Grain-Free)

2 cups almond flour
1 tsp baking powder
1/4 cup almonds OR walnuts, chopped finely (reserve 1 tbsp. for topping)
1 tsp cinnamon
3 large eggs
1 tsp pure vanilla extract
1/2 cup pure honey (for this recipe, I chose pure 'wildflower blossom' honey)
1/4 cup coconut oil, melted
Preheat oven to 350F.
In a large bowl, combine dry ingredients (almond flour, baking powder, chopped nuts and cinnamon).
In a separate bowl, combine remaining ingredients.
Combine both mixtures.
Line an 8X4 loaf pan with parchment paper.
Pour mixture carefully into lined pan.
Sprinkle with reserved chopped nuts and a bit of cinnamon.
Bake 30-40 minutes or until a toothpick, inserted in the centre of the cake, comes out clean.
Allow to cool and enjoy!
