400 grams good-quality tea biscuits (if necessary, choose gluten-free), broken
2 tbsps organic whole milk*
1/4 cup organic cane sugar
3 tbsps raw cacao powder
1/3 cup organic butter*
2 tbsps walnuts (or a mix of your favourite nuts - pistachios are great!), chopped
2 tbsps raisins
1 tsp pure vanilla extract
To gently marinate biscuits, place the broken pieces in large bowl and pour milk over them. Toss until pieces are well-coated.
In large saucepan, over low heat, combine sugar, cacao and butter and stir until melted.
Remove from heat and add 2 eggs. Mix gently.
Add nuts, raisins and vanilla. Add marinated biscuits, while making sure that all ingredients are well combined.
Place 1/2 the mixture on a sheet of parchment paper. With the help of the paper, mold carefully into the shape of a log. Secure with an elastic band. Repeat with remaining mixture.
Freeze overnight. Slice and serve. Keep frozen.
Makes 2 Chocolate Salamis.
* Please note that when using milk ingredients, full-fat and organic is always advisable. Full-fat milk is beneficial and protective against a number of diseases, and organic milk, while costing a little more, has no growth hormones, no antibiotics and has more Omega-3 fatty acids than conventional milk.
** For a Dairy-free version of this recipe, although I've never tried it, you may substitute the whole milk for almond milk and the butter for coconut oil.
